Job Description:

The Assistant Food and Beverage Controller will play a vital role in planning and developing menus for the employee cafeteria, ensuring the correct preparation and presentation of food items. They will also control labor and operating expenses, maintain sanitation standards, and communicate effectively with employees and managers to meet operational needs

Key Responsibilities:

  • Develop and implement menu plans for the employee cafeteria, ensuring consistent quality for all prepared food items
  • Optimize labor and operating expenses through effective organization, purchasing decisions, and inventory control
  • Ensure compliance with sanitation standards as set forth by Four Seasons, local, state, and federal regulations, as well as maintain the cleanliness and organization of the kitchen
  • Facilitate communication among employees and managers to ensure operational needs are met, participating in regular operational meetings to coordinate and cooperate between departments
  • Collaborate harmoniously and professionally with co-workers and supervisors
  • Utilize typing, recipe costing, making pick-up charts, and creating spreadsheets to optimize work efficiency
  • Conduct regular quality checks to ensure food quality meets standards
  • Motivate and inspire team members through team-building activities
  • Demonstrate and develop the pastry team's skills, contributing to operation success
  • Flexibility to work in different shifts and areas of the pastry kitchen to fulfill business needs and acquire knowledge to successfully meet expectations and grow within the organization

Requirements:

  • Three years of experience working in a similar position in five-star luxury hotels
  • Ability to work effectively under pressure in a fast-paced team environment
  • Attention to detail and thoroughness
  • Excellent verbal communication skills in English
