Chef (Continental) Role Summary

We are seeking a highly skilled and experienced Executive Chef/Sous Chef to oversee our kitchen operations. The ideal candidate will have a strong background in Continental cuisine, including Italian, Mexican, and Mediterranean cooking methods.

The successful candidate will be responsible for managing the kitchen team, ensuring that all food is prepared to the highest standards of quality and presentation. They will also be responsible for planning and pricing menu items, ordering supplies, and maintaining accurate records and accounts.

Key Responsibilities:

  1. Direct the preparation, seasoning, and cooking of salads, soups, vegetables, or other foods.
  2. Plan and price menu items, order supplies, and keep records and accounts.
  3. Supervise and participate in cooking, baking, and the preparation of foods.
  4. Participate in checking all purchased supplies for quality and account for each delivered item.
  5. Menu planning, menu development, cost-effective budgeting, and hygiene maintenance.
  6. Monitor quality standards of products with team members, taking corrective action when necessary.
  7. Establish, implement, and control performance to achieve the highest possible hygiene standards.
  8. Be demanding and critical when it comes to food qualities and service standards.
  9. Preparation and regular update of food and beverage production budget, ensuring targets are met and costs are effectively controlled.
  10. Motivate and develop a positive culinary team.
  11. Ensure all kitchens are managed efficiently according to established concept statements and brand standards.

Candidate Requirements:

  1. 2+ years of experience as an Executive Chef/Sous Chef in Continental cuisine.
  2. Understanding of various cooking methods, ingredients, equipment, and procedures.
  3. Excellent record of kitchen and staff management.
  4. Accuracy and speed in handling emergency situations and providing solutions.
  5. Familiarity with industry best practices.
  6. A degree in Culinary Science or related certificate would be a plus.
