Job Overview

The Executive Steward is a pivotal role within the hospitality industry, overseeing the stewarding team and ensuring exceptional standards are maintained across kitchens and back-of-house areas.

This includes enforcing strict hygiene and sanitation protocols, maintaining equipment, and managing inventory to deliver seamless service to guests.

Main Responsibilities
  • Lead and train the stewarding team in all aspects of steward functions, including cleaning, maintenance, and sanitation of kitchen equipment and areas.
  • Maintain a clean and organized environment throughout kitchens, back-of-house areas, staff dining room, storage rooms, and stewarding equipment areas.
  • Enforce stringent hygiene, sanitation, and safety standards during stewarding and waste disposal activities.
  • Oversee the operation, maintenance, and preventative care of all stewarding machinery and equipment to ensure optimal performance.
  • Monitor par stock levels of china, silverware, glassware, and other back-of-house items; manage storage, inventory, and collection, washing, and restocking processes.
  • Control breakage, monitor usage, and inspect garbage areas to maintain cleanliness and prevent waste.
  • Support culinary and banquet operations by coordinating supply of kitchenware, assisting with setups, and ensuring smooth food service logistics.
  • Assist with department inventories and maintain records of cleaning supplies and chemical usage.
  • Promote consistent communication and coordination with the Executive Chef, Banquet Team, and Hygiene Manager for compliance with HACCP and other food safety regulations.
Requirements
  • Minimum 3 years of experience in a leadership role within a similar luxury environment.
  • Strong working knowledge of hygiene and safety protocols, including HACCP compliance.
  • Effective communication and interpersonal skills; fluent in English (written and spoken).
  • Hands-on approach with the ability to lead, motivate, and train a diverse team.
  • Organized, detail-oriented, and able to work in a fast-paced environment.
