About the Role:
The Central Kitchen General Manager oversees all kitchen operations, ensuring efficiency, quality, and adherence to food safety and hygiene standards. This position requires a highly organized and detail-oriented individual who can effectively manage daily kitchen operations, maintain consistency and quality in food preparation, production, and presentation, and develop and implement operational procedures and best practices.
Main Responsibilities:
- Oversight of daily kitchen operations ensures smooth workflow and timely production.
- Monitoring of food preparation, production, and presentation maintains consistency and quality.
- Development and implementation of operational procedures and best practices.
- Compliance with food safety, hygiene, and health regulations (HACCP, ISO, etc.).
- Kitchen layout and workflow management for maximum efficiency.
- Contingency planning for operational disruptions.
- Recruitment, training, and supervision of kitchen staff.
- Assignment of responsibilities and clear communication within the team.
- Performance evaluations and staff training.
Key Performance Indicators:
- Order fulfillment rates
- Waste percentage
- Staff productivity
Skills and Qualifications:
To be successful in this role, you will need to have:
- A degree in Hospitality Management, Culinary Arts, Business Administration, or related field.
- Up to 5 years of experience in a central kitchen, large-scale food production, or F&B operations, with at least 3 years in a managerial role.
Desirable Skills:
- Strong leadership and team management skills
- Excellent knowledge of food production, safety, and hygiene regulations
- Budgeting and cost-control experience
- Strong organizational and problem-solving abilities
- Ability to work under pressure and manage multiple tasks
- Proficiency in kitchen management software and Microsoft Office tools
