Job Description

The Executive Culinary Director oversees all back-of-house operations for multiple restaurants and kitchens within a single market, ensuring quality, food safety standards, and cost control measures.

Key Responsibilities

  • Maintain Health, Safety, and Environment (HS&E) policies and procedures, ensuring compliance with health and safety regulations.
  • Implement brand-specific hygiene procedures and ensure continuous compliance with quality and regulatory standards.
  • Coach and train kitchen staff on new recipes and cooking techniques to promote their development and enhance food production efficiency.
  • Collaborate with stakeholders to develop new menu items and recipes, ensuring alignment with the brand's concept and cost parameters.
  • Coordinate ingredient procurement and storage to minimize wastage and maintain pre-set food costs.
  • Oversee end-of-month inventory, daily wastage tracking, requisitions, and deliveries to uphold quality standards and cost-effectiveness.
  • Ensure proper operation and maintenance of kitchen equipment as a safety measure.
  • Conduct quality assurance inspections as directed by senior management.

Qualifications

  • Fluency in English.
  • Food Safety Level three certification.
  • Bachelor's degree in Hotel Management or a related field.
  • Minimum six years of experience in Culinary Management or a similar role, including three years of managerial experience.
