The Director of Catering will report to the Commercial Director with a dotted line to the Director of F&B.

People

Set stretching goals for the team in conjunction with the Commercial Director. Lead them to achieve and exceed financial goals, with reviews on a monthly, quarterly, and annual basis. Regularly communicate with Event Managers to review department performance, staff, goals, and objectives. Develop and motivate employees, maintaining high levels of communication.

Product

Develop and promote creativity and innovation within the department to differentiate from competitors, motivate staff, encourage new business, and facilitate up-selling.

Maintain good relationships with counterparts in other establishments and report competitive analysis as needed.

Participate in weekly sales and forecast meetings and attend all required meetings.

Establish and monitor office procedures for effectiveness.

Delegate duties within the department, monitor processes, and ensure work is up-to-date.

Develop creative banquet/event menus with appropriate pricing based on local competitive analysis.

Conduct weekly meetings with support departments to review upcoming events.

Inform management and PR of booked functions, especially those involving high-profile personalities or security-sensitive events.

Coordinate event details with the Executive Chef, Banquet Manager, and Banquet Service Managers.

Oversee event execution to ensure high standards of food, beverage, and service.

Profit

Maximize marketing and sales efforts for events, coordinating with the Commercial Director.

Drive proactive sales efforts for social and non-residential events against targets.

Finalize bookings, maximize revenue through up-selling, and secure deposits following credit policies.

Monitor departmental expenses, including payroll, utilities, and F&B costs.

Prepare weekly booking, pace, and other financial reports.

Maintain accurate records such as turn away reports and Golden reports.

Manage food costs and menu planning thoroughly.

Prepare weekly, monthly, and annual forecasts and budgets for labor, revenue, and costs.

Additional Responsibilities

Assist with inquiries in sales, marketing, and events, including handling high call volumes and site inspections.

Maintain an active presence in the local community to generate business, recruit talent, and support PR efforts.

Perform any other duties or projects as directed by the Director of Food and Beverage.

Maintain quality goals through follow-up on manager reports, guest comments, LQA reports, and Qualtrics feedback.

Act as liaison for vendor/supplier needs and host banquet event order and resume meetings.

Qualifications

Experience of 3-5 years in a similar role, preferably in Middle East countries.

Proficiency in English; Arabic skills are a plus.

Strong leadership, adaptability, creativity, coaching, and people development skills.

Excellent organizational skills with the ability to multitask and pay attention to detail.
